This juicy Bruschetta is complimented by avocado and tops off grilled chicken on a thick slice of Texas toast smothered in fresh mozzarella cheese and finished with balsamic glaze. Make this for dinner tonight!
There’s something about eating outside, being closer to nature. The fresh air, the warmth of the sunshine, a gentle breeze, this makes me happy, it refreshes me. Add some good food and it’s perfect.
It’s the perfect season to make Chicken Bruschetta Cheese Toast and enjoy it al fresca!!
I may have mentioned before how much I adore fresh summer produce. Tomatoes are one of my favorites. There is nothing like a home grown tomato. They just don’t compare. I’ve found I don’t even eat them near as much in the winter because they just lack flavor. Of course if you live somewhere with perfect weather conditions for fresh produce all the time, you probably never thought about it. Right now I’m enjoying summer’s bounty!
First, make your balsamic glaze. Use about 1 cup of balsamic vinegar and 2 tbs of honey. Bring this to a boil, and then lower the temperature to a simmer. Just let it simmer until it reduces to a half of a cup or so. Do keep your eye on it so it doesn’t burn. As it reduces it will get thicker. You want it to cover the back of a spoon. This can take about 15 minutes to a half an hour. After it’s finished, let it cool fully. It will thicken a bit more once it’s cooled.
Quarter the tomatoes and place them in a medium size bowl. Then add a couple tablespoons of olive oil to get them marinating. Add 2-3 cloves of garlic pressed through a garlic press, chopped avocado, and fresh basil chiffonade (that’s a fancy way to slice fresh basil or other leafy greens into long thin strips). Season with salt and pepper, and set aside.
Grill one side for a few minutes, then flip it over and add fresh mozzarella cheese. Close the lid of the grill and let it get all melty. Fresh mozzarella is a smooth velvety cheese. Then add the tomato avocado mixture and drizzle balsamic glaze over the top

Chicken Bruschetta Cheese Toast
- 1 cup balsamic vinegar
- 2 Tbs honey
- 2 pints cherry tomatoes quartered
- 1 avocado chopped
- 3 cloves garlic pressed
- 1/4 cup fresh basil chiffonade
- 2 Tbs olive oil
- salt and pepper to taste
- 3 boneless skinless chicken breasts
- Italian seasoning to taste
- 6 slices texas toast
- 6 slices fresh mozzarella cheese
For the balsamic glaze, combine balsamic vinegar and honey together in a small saucepan and simmer until reduced to 1/2 cup. Chill.
Combine tomatoes, avocados, garlic, basil, olive oil and salt and pepper, stir and set aside.
Season chicken with salt, pepper and Italian seasoning.
Grill the chicken until cooked through, then slice it against the grain into strips.
Grill one side of the texas toast.
Turn the toast and place a slice of mozzarella cheese on top, cover until melted.
Remove from the grill.
Top each piece of toast with chicken, tomato mixture and balsamic glaze.
