Who doesn’t love a good old fashioned egg salad sandwich? This is a very pure and simple recipe. Plus, I’ll show you an awesome way to ‘chop’ your eggs fast.
Start with your peeled hard boiled eggs. (put your eggs in cold water, bring to a boil, cover and turn off the heat, 15 minutes later… perfect.)
Put an egg on a baking rack, yes, the kind you use for cookies.
Push it through..
Look! How easy and fast is that? Plus, it’s kind of fun, my kids totally wanted to do this for me.
Add your mayo, mustard, honey (yup I did say that) and salt. Mix it well and there you have it.
Farm fresh eggs make this especially good.

- 12 hard boiled eggs peeled and chopped
- 1/2 cup mayonnaise
- 2 Tbs mustard
- 1 Tbs honey
- 1 tsp salt
- Mix all ingredients and stir until combined.
