Elvis Cupcakes

What would inspire me to make Elvis Cupcakes? What would inspire me to put bacon on my cupcakes? Both good questions. 🙂 Suspicious Minds” want to know, I’m sure.

I know mixing salty sweet is all the rage, but, that is not where this inspiration came from. Nope, this was inspired from my book club.

You know I love these people, if you’ve read any of my other book club posts, you know how much I love these ladies and their creativity never ceases to amaze me.

So, the book:  The Rosie Project

Here’s a synopsis from Amazon~

The Rosie Project was a fun, quirky and easy read. The lightness and humor was perfect around the holidays when we read it. It also makes a great beach read!

But you’re still probably wondering what the heck this has to do with Elvis Cupcakes. Well, one of the characters kind of has a thing for cupcakes. Our gracious host spoiled us rotten with a plethora of fabulous cupcake flavors that she bought at a local store.

Going along with the theme, check out the cute napkins, beakers and test tubes. It was so perfect for Don’s character!

As you probably figured out, The Elvis Presley cupcake was one of the many we tried. Since it had us “All Shook Up”, I thought I’d try to re-create that one at home. Plus, I LOVE peanut butter, and I thought the kids would get a kick out of having bacon on their cupcakes.

You may think this cupcake is the “Devil in Disguise”, but I’m here to tell you, it’s just a “Big Hunk O’ Love”

Banana Cupcakes with Peanut Butter Frosting and bits of bacon

Ingredients

Cupcakes

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 3/4 cup sugar
  • 1 cup mashed bananas about 3
  • 1/4 cup unsweetened apple sauce

Peanut Butter Frosting

  • 1/2 cup butter
  • 1 cup all natural peanut butter
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup cooked bacon, crumbled

Instructions

Cupcakes

  • Preheat oven to 425.
  • Whisk together flour, baking powder, baking soda and cinnamon, set aside.
  • combine sugar, mashed bananas and applesauce, stir well.
  • Make a well in the dry ingredients, and pour in the wet ingredients. Stir to combine.  Do not over stir.
  • Spoon batter into cupcake wells, fill about 2/3 of the way. See notes for my favorite muffin pan! A regular muffin tin will need to be greased, or cupcake liners will be needed.
  • Bake for 8 minutes at 425. Then reduce heat to 350 and bake for another 15-20 minutes. A toothpick should come out clean when finished.
  • Cool cupcakes completely before frosting.

Frosting

  • Cream together the butter and sugar in a stand mixer.
  • Add peanut butter and salt and mix on high until well blended. If frosting is too thick, add milk or cream 1 tablespoon at a time until you reach desired consistency
  • Frost fully cooled cupcakes. Garnish with crumbled bacon. Enjoy!

Notes

This is my favorite muffin pan! No need to grease it, and nothing sticks to it. Washes easily with soap and warm water.
The reason for starting the oven at a higher temp is to get perfectly domed cupcakes.

  1. The base is more of a muffin/bread texture, heavier than a cake. Over stirring and over baking can make baked goods ‘tough’. But I’m not sure if you mean tough like heavy. If not, then I’d watch the mixing and maybe bake a little less time. But, overall it is more dense than cake. 🙂 It is an eggless recipe! And it’s probably the number one comment I get about it, but to clarify, I did not forget them. 😉 Thanks for trying it!

  2. Hello! I made this recipe once last year and overall loved them. I noticed the cake part turned out kind of tough though more like a muffin. I noticed that there are no eggs added in your recipe and curious if they are meant to be that way? Thanks!
