Welcome back to the Summer Grilling Series! I’m sharing some fabulous grilling recipes all summer long to keep the bbq interesting!

I just love using marinades as a way to flavor meat. The options are endless, they usually take just a few minutes to put together, and don’t have too many ingredients. Simple yet elegant is a theme I like to live by in more than just cooking.

But let’s get back to grilling. In Michigan we have 4 seasons, and we live them to the fullest. So, when it’s strawberry season, we eat them like they’re going out of style, because locally, they are. The same goes with cherries, blueberries, peaches, and so on.

I mentioned a lot of fruits there, but it’s true for all the in season produce including veggies. As it is with the grill. We love to cook outside during the summer. One thing that never goes out of style though: chicken.

Last week I posted this Coconut Lime Grilled Chicken, have you tried it yet? You’ll want to add it to your meal plan for sure. Don’t worry, I’m not only grilling chicken, I’ll be sharing recipes for pork and beef too. Maybe I can even sneak some fish in there too.

Make ahead

This marinade is freezer friendly! Place the chicken in a ziplock bag, Combine all the ingredients, then pour it over the chicken and seal the bag. Mix it around to get it all covered and lay it flat in your freezer.

Thaw in the fridge before cooking.

Let’s Get Grilling

The flavors of this Greek yogurt chicken are light and fresh. I love the creaminess of the yogurt and the brightness of the lemon. Reserve some of the marinade (before putting it on the chicken) and use it for a dipping sauce. Serve the chicken with a nice green vegetable and some flat bread.

Greek Yogurt Grilled Chicken

Chicken drumsticks  marinated in Greek yogurt, lemon, garlic and oregano. Grilled to perfection for a delicious summer dinner.

Ingredients

  • 1 package chicken drumsticks
  • 1 cup non fat plain Greek yogurt
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp oregano
  • zest of 1 lemon
  • juice of half of a lemon
  • 1/2 tsp salt
  • fresh cracked pepper to taste
  • 1/4 bunch fresh parsley, chopped

Instructions

  • Place chicken in a shallow dish or ziplock freezer bag.
  • Combine remaining ingredients, whisk well.
  • Pour over the top of the chicken. Marinate for at least 30 minutes and up to 1 day.
  • To cook, remove chicken from marinade and place on a preheated grill (400-500 degrees). Cook for 5-10 minutes per side or until cooked through.

Notes

MAKE AHEAD INSTRUCTIONS:
Place all ingredients in a freezer bag, seal and push contents around to mix well. Place in a second freezer bag, label and lay flat in the freezer.
When ready to use, thaw in the refrigerator and follow cooking instructions

  1. Great question! They are sold in different size packages. Usually about 8 drumsticks in a 2 pound package. I buy the family size which is usually anywhere from 4-5 1/2 pounds, and that one has 12-16 drumsticks in it depending on how big each leg is.
