We love parfaits. I have great kids, because they pretty much love everything I serve them. Probably one of their favorites though are parfaits. They look pretty and I think they like working through the layers. The combinations are endless, but today, I’m sharing a very simple, 2 ingredient parfait.
First you have to slice your mango and scoop the flesh out. Does anyone have one of those cool mango cutter things? I have one on my wish list. I saw someone use it at a smoothie place, and it was magical. I need to get one.
Mangoes can be kind of a pain to cut around the pit, but once you get use to it, it’s not so bad.
Turn it on and puree the fruit.
Now you’re ready to make your parfait.
Start with a layer of yogurt.
Then pour some Mango puree on top
Repeat the layers until your glass is full.
It would be awesome topped with granola, but I am fresh out!
What’s your favorite parfait?
- 3 Mangoes
- 2 cups Greek Vanilla Yogurt
- Slice mangoes and scoop out flesh.
- Puree in a blender.
- Put a tablespoon or 2 in the bottom of a glass jar/dish
- Put a layer of Mango puree
- Repeat 2 more times.
- Top with granola if desired.
