I may have mentioned… a couple hundred times, that I’m in love with pumpkin. If we had pumpkin all year long, I wonder if I would have the same affection for it. There is something about seasonal items that bring joy. We get so excited in the summer to have our Starbucks iced, and that first cup of Hot Cocoa is so welcoming in the winter after a good play in the snow. We used to live in Grand Haven, and there is a seasonal beach side restaurant, “Butch’s Beach Burritos”. They open at the very end of April, and close in September. It’s for sure a local hangout. We would always make sure we were there on that first day enjoying the unique flavor that they offer.
Even though I have my favorite seasons, things like pumpkin, apples, hot cocoa and iced coffee and ice cream make them all so enjoyable.
Okay, so let’s get to the recipe of the day.
You’ll need rolled oats, pumpkin puree, maple syrup, cream cheese, honey and pumpkin pie spice.
Bring the oats and water to a boil, reduce the heat and simmer until the water is absorbed and it’s a creamy consistency. While that’s simmering away, take 2 oz of cream cheese and mix it with 2 tablespoons of honey. Put it in a zip lock bag, squeeze the air out of it, and snip the corner of the bag, just a tiny tiny bit.
Back to the oatmeal, once it’s ready, add in the pumpkin, pumpkin pie spice, maple syrup and salt. Stir to combine and let it sit a few minutes on low to warm it through.
Serve it with the cream cheese frosting on top.

Pumpkin Roll Oatmeal
- 2 cups rolled oats
- 3 1/2 cups water
- 1 cup pumpkin puree
- 1 tsp pumpkin pie spice
- 1-2 tbs pure maple syrup
- 1/2 tsp salt
- 2 oz cream cheese
- 2 tbs honey
- Combine the water and oats in a sauce pan and bring to a boil.
- Reduce heat and simmer until desired consistency, stirring occasionally.
- While oatmeal is simmering, combine 2 oz cream cheese and 2 tbs honey.
- Place the mixture in a ziplock bag, squeeze out excess air and snip corner of the bag.
- Add pumpkin, pumpkin spice, maple syrup, and salt to the oatmeal and stir.
- Let sit a few minutes to warm through
- Serve oatmeal in bowls with cream cheese 'frosting' swirled over the top.
