Quinoa Breakfast Bowl
Breakfast is probably my favorite meal of the day. But now that I say that, I think, I don’t know, do I really have to choose? No! I do not. Although, the experts do say that it is the most important meal of the day. I tend to agree. Start your day with a Quinoa Breakfast Bowl. It’s easy. It’s fast. It’s delicious.
So, I have people in my life that don’t eat breakfast. They just aren’t hungry when they wake up. Or they just need to wake up before they can eat. Do you know people like this? I believe it’s true, how they’re feeling, but I can’t relate. I NEED my breakfast. Sometimes I wake up hungry! Now, I get up quite early, so I do try to hold off a little while as not to wake my kids. This is when I get a little peace and quiet. It’s dark, and quiet, and peaceful. This is when I’m productive. So, usually I tide myself over with a Chai Tea. Let’s be real, my lifeblood!!! Totally addicted, can’t live without it. But when I can’t hold out any longer for food, this quinoa breakfast bowl is one of my favorites.
How about lunch? This may be called a breakfast bowl, but it’s perfect for lunch. I also know people that “forget” to eat lunch. Really? you forget? Friends. Never in my life have I ever forgotten to eat a meal. But anyway, whether you eat it for breakfast or lunch or dinner, it is sure to satisfy and nourish. 🙂
When we have quinoa as a side dish, I like to just make some extra so I have it for breakfast for the next day… or week. Then in the morning, all you do is warm it up, put your egg (cooked to your preference) on top and add your veggies. I usually will saute some onions to put in it too, but it’s up to you. This recipe is totally flexible. Warm your veggies, or not, pick what you like with it. Whatever floats your boat! I made this one with cherry tomatoes, avocado and fresh basil.

Quinoa Breakfast Bowl
- 1/2 cup cooked quinoa
- 1 egg
- 1 Tbs butter or olive oil
- 1/4 cup onions chopped
- 3-4 cherry tomatoes
- 3 slices avocado
- fresh basil
- Saute' onions in butter or olive oil
- Mix onions with 1/2 cup warmed quinoa and place in a bowl.
- Add tomatoes, avocado and basil
- Prepare the egg to your preference and top off the bowl.
