Sparkling Cranberry Brie Bites

I made these cranberry brie bites for my Christmas Eve open house. The recipe is adapted from  Yummy Mummy.  She compared these to sparkly shoes, and being a shoe lover, I couldn’t agree more. Who doesn’t love sparkly shoes? Sugared Cranberries sitting in dollop of cranberry sauce on top of brie resting on a lovely little cracker. Just like sparkly shoes, who doesn’t want this? The cranberries are just the right balance of tart and sweet because they are marinated in maple syrup.

Cranberry Brie bites are not hard to make. They do take a little preparation, but it really doesn’t take long at all to do that. Start the day before to marinate the berries. Warm some maple syrup on the stove and pour them over the berries.

Now, you need to use good maple syrup, as in 100% pure. No Mrs. Butterworth or Aunt Jemima (no offense ladies). And, make sure the syrup is just warm, not hot, otherwise the berries will burst. The cranberry brie bites are not near as beautiful with burst berries. 🙂

The next day, drain the berries, and roll them in sugar.

Then they’ll need about an hour to dry.

After an hour, you’re ready to assemble them.

Ingredients for cranberry brie bites: crackers, brie, cranberry sauce, sugared cranberries, and fresh mint leaves.

I just used a basic table water cracker. The cheese and berries have so much flavor already that something plain with a nice crunch is ideal. Lay a slice of cheese on the cracker, then a dollop of cranberry saucesome sugared cranberries and a mint leaf.

These will be the prettiest food at your table! You won’t need anything else! Okay, if you’re a foodie like me, of course there will be more food. But I love that this is unique. Probably no one else is bringing this type of cheese and crackers to the party.

Sparkling Cranberry Brie Bites

Ingredients

  • 2 cups fresh cranberries
  • 1 cup pure maple syrup
  • 1 cup granulated sugar
  • 16 crackers
  • 8 oz Brie cheese
  • cranberry sauce
  • fresh mint for garnish

Instructions

  • Rinse cranberries and place in a medium bowl.
  • Heat syrup in a small sauce pan just until warm.
  • Pour over cranberries when syrup is warm, not hot, or cranberries may pop.
  • Cool, cover, and let soak in the refrigerator overnight.
  • Drain cranberries in a colander.
  • Place sugar in a large bowl or baking dish.
  • Add cranberries in batches and roll around until lightly coated in sugar.
  • Place on a baking sheet until dry, about 1 hour.
  • Assemble crackers with one slice of brie, a light layer of cranberry chutney, and 4 or 5 sugared cranberries.
  • Garnish with fresh mint sprigs.

I love brie, and the cranberries looks so gorgeous on top with the sugar and cranberry sauce. These would be the star of the show at any holiday get together.
