CARROT CAKE OVERNIGHT OATS

Carrot Cake Overnight Oats is one of the best ways to start your day! All the flavors of carrot cake (YUM!) packed into a healthy oatmeal breakfast. It's high in protein, thank you Greek yogurt, and plenty sweet but without refined sugar.

The energizing oats and chia seeds will keep you satisfied until your next meal. Your tastebuds might think you're eating dessert, and that's just fine, we don't have to tell. I'm also a huge fan of these because you can make them ahead and have your breakfast meal prep done for the week! Win!!

WHAT ARE OVERNIGHT OATS? Basically it's a no cook method for eating oatmeal. Instead of cooking it on the stove with water, you soak the oats in milk. The soaking process allows the oats to absorb the liquid, making them soft enough to eat without cooking. They really only need a couple hours in the fridge, but overnight is ideal.

My basic overnight oats recipe is just a few simple ingredients: – old fashioned rolled oats – almond milk – plain, nonfat, Greek yogurt – chia seeds – honey, maple syrup, or sweetener of choice. I usually use a stevia based sweetener, such as Truvia.

Once you have your base, the flavor combinations are endless! My very first one was Blueberry Maple Refrigerator Oats. I've made several since then, Toasted Coconut overnight oats are among my top favorites, along with Pumpkin Chocolate Chip Overnight Oats.
