Using classic daiquiri ingredients, this Virgin Raspberry Daiquiri lends a tart raspberry flavor to a mixture of fresh squeezed lime, rum extract, and simple syrup mix.
Fresh raspberries can be used instead of frozen, but you’ll want to add 1-2 cups of ice to make it slushy/frozen and blended.
This makes a thick blended drink, add more water if you prefer a thinner consistency.
Rum extract can be increased or eliminated based on your preference. It gives it that sweet toasted sugar rum flavor.
Make it a cocktail! Just add 2 shots of rum to the blender before mixing. Eliminate the rum extract.
Optional: strain out the seeds if you prefer. Use a fine mesh strainer, pour the mixture through it and press through until the seeds remain and the liquid has gone through.
Daiquiris are not always frozen. A variation of this would be to blend fresh raspberries, strain out the seeds (in this case I would), then add it with lime juice, rum extract, and ice to a cocktail shaker. Then shake until the container is nice and cold. Pour into a coupe glass and enjoy.
Simple syrup is equal parts water and sugar, warmed until the sugar is dissolved, then cooled. Store in the refrigerator.
