Mini Cheese Stuffed Meatloaf Cups Recipe

Juicy individual sized meatloaves stuffed with creamy goat cheese and topped with whole cranberry sauce glaze

Ingredients

  • 1 12 oz bag of fresh cranberries
  • 3/4 cups 100% cranberry juice
  • 1 cup sugar
  • 3 pounds ground beef
  • 2 eggs
  • 1 cup cranberry sauce see notes
  • 2/3 cup bread crumbs (if you are low carb use joseph's brand pita and pulse in a food processor)
  • 1 Tbs minced fresh rosemary
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 oz log of plain goat cheese

Instructions

  • Bring the cranberry juice to a boil in a small saucepan.
  • Add cranberries and cook for 5-10 minutes over medium heat, stirring occasionally.
  • Pour berry mixture through a fine mesh sieve, pressing through with a large spoon or bottom of a mason jar.
  • Return the sauce to the pan and heat until boiling.
  • Add the sugar and boil for 1 minute.
  • Chill for a couple hours until it sets up.
  • Preheat oven to 350
  • Combine meat, eggs, cranberry sauce, bread crumbs, rosemary, salt and pepper in a large bowl.
  • Mix well until incorporated.
  • Fill each muffin cup half way.
  • Add a tablespoon or so of goat cheese
  • Fill the rest of the way with more meat mixture.
  • Bake at 350 for 45 minutes or until cooked through.
  • Remove from the oven and transfer the meatloaf cups (there will be some grease) to a plate.
  • Top with another pat of goat cheese if desired, and cranberry sauce.
  • Serve immediately.

Notes

This recipe makes 18 mini meatloaf cups. It can easily be halved for less servings
I used both strained cranberry sauce, which the recipe is included, and whole cranberry sauce. You can easily use one or the other. I had both, so it was no extra effort. If you prefer a whole cranberry sauce, just don't strain the berries in step 3 and move on to step four.
You can used canned cranberry sauce if you prefer. If you are using the home made, you may want to make it ahead of time to make this recipe come together faster.
Although the recipe calls for you to chill and set the sauce, it's actually not necessary for use in the meat mixture. However, you may want it set up for the topping.
For a low carb/keto option, use almond flour instead of bread crumbs.
