Greek Isle Appetizer
A delicious pizza with spinach, artichokes, tomatoes, olives, and different cheeses. The shortcut for the crust is brilliant. This makes a great appetizer for a potluck or game day.

2 refrigerated pie crust 1/2 cup freshly grated Parmesan cheese 8 oz cream cheese 4 oz feta cheese 10 oz chopped spinach thawed, from a box 1 clove clove garlic minced 12 oz artichoke hearts drained & chopped 3 1/2 oz can of sliced black olives 1 lemon zested 1 1/2 tsp Italian seasoning 3 Roma tomatoes thinly sliced
Preheat oven to 375°
Lightly dust cookie sheet with flour.
Roll out one pie crust and sprinkle with Parmesan cheese.
Roll out second pie crust on top of cheese.
Prick with a fork and bake at 375° for 20-25 minutes, cool.
Combine cream cheese, feta, spinach and garlic.
Spread over baked crust.
Combine artichokes, olives, zest and seasoning and spread over feta mixture.
Slice tomatoes and place on top.
Sprinkle with additional parmesan cheese and bake for 10 minutes or until cheese is melted.
