Greek Isle Appetizer

Ingredients

  • I pkg refrigerated pie crusts
  • 1/2 cup freshly grated Parmesan cheese
  • 8 oz cream cheese
  • 4 oz feta cheese
  • 10 oz box chopped spinach thawed
  • I clove garlic minced
  • 12 oz jar artichoke hearts drained & chopped
  • 3 1/2 oz can of sliced black olives
  • I lemon zested
  • 1 1/2 tsp Italian seasoning
  • 3 Roma tomatoes thinly sliced

Instructions

  1. For the crust:
  2. Lightly dust cookie sheet with flour.
  3. Roll out one pie crust and sprinkle with Parmesan cheese.
  4. Roll out second pie crust on top of cheese.
  5. Prick with a fork and bake at 375*for 20-25 minutes, cool.
  6. Combine cream cheese, feta, spinach and garlic.
  7. Spread over baked crust.
  8. Combine artichokes, olives, zest and seasoning and spread over feta mixture.
  9. Slice tomatoes and place on top.
  10. Sprinkle with additional parmesan cheese and bake for 10 minutes or until cheese is melted.
