Greek Isle Appetizer

A delicious pizza with spinach, artichokes, tomatoes, olives, and different cheeses. The shortcut for the crust is brilliant. This makes a great appetizer for a potluck or game day.

Ingredients

  • 2 refrigerated pie crust
  • 1/2 cup freshly grated Parmesan cheese
  • 8 oz cream cheese
  • 4 oz feta cheese
  • 10 oz chopped spinach thawed, from a box
  • 1 clove clove garlic minced
  • 12 oz artichoke hearts drained & chopped
  • 3 1/2 oz can of sliced black olives
  • 1 lemon zested
  • 1 1/2 tsp Italian seasoning
  • 3 Roma tomatoes thinly sliced

Instructions

  • Preheat oven to 375°
  • Lightly dust cookie sheet with flour.
  • Roll out one pie crust and sprinkle with Parmesan cheese.
  • Roll out second pie crust on top of cheese.
  • Prick with a fork and bake at 375° for 20-25 minutes, cool.
  • Combine cream cheese, feta, spinach and garlic.
  • Spread over baked crust.
  • Combine artichokes, olives, zest and seasoning and spread over feta mixture.
  • Slice tomatoes and place on top.
  • Sprinkle with additional parmesan cheese and bake for 10 minutes or until cheese is melted.
