Perfect Lemon Curd Recipe {the best}

sweet, tangy, tart, smooth, perfectly luscious lemon curd. Eat it alone or use it as a topping on a plethora of things.

Ingredients

  • Zest of 3 lemons
  • 3/4 cups freshly squeezed lemon juice about 3-4 lemons
  • 1 1/4 cups sugar
  • 5 large eggs
  • 1 pinch salt
  • 12 Tablespoons butter cut into sections of 1 tablespoon each

Instructions

  • In the insert pan of a double boiler (if you don't have a double boiler see notes) combine lemon zest, lemon juice, sugar, eggs and salt.
  • Whisk very well.
  • Place insert pan over the double boiler pan of simmering water. There should only be an inch or so of water.
  • Whisk constantly for 15 minutes. You will see it thickening up between 10 and 15 minutes.
  • Remove from heat, and add butter 1 or 2 tablespoons at a time and continue whisking until melted. After all the butter has been added and is whisked in, pour the curd through a fine mesh sieve.
  • Chill curd for about 3 hours or overnight.

Notes

If you don't have a double boiler, mix the ingredients in a metal (preferably) or glass bowl and place that over a pan of simmering water (about an inch or so of water).
