Pumpkin Roll Oatmeal
This pumpkin roll version of oatmeal tastes like dessert without all the sugar.

- 2 cups rolled oats
- 3 1/2 cups water
- 1 cup pumpkin puree
- 1 tsp pumpkin pie spice
- 1-2 tbs pure maple syrup
- 1/2 tsp salt
- 2 oz cream cheese
- 2 tbs honey
Combine the water and oats in a sauce pan and bring to a boil.
Reduce heat and simmer until desired consistency, stirring occasionally.
While oatmeal is simmering, combine 2 oz cream cheese and 2 tbs honey.
Place the mixture in a ziplock bag, squeeze out excess air and snip corner of the bag.
Add pumpkin, pumpkin spice, maple syrup, and salt to the oatmeal and stir.
Let sit a few minutes to warm through
Serve oatmeal in bowls with cream cheese 'frosting' swirled over the top.
