Pumpkin Roll Oatmeal

This pumpkin roll version of oatmeal tastes like dessert without all the sugar.

Ingredients

  • 2 cups rolled oats
  • 3 1/2 cups water
  • 1 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1-2 tbs pure maple syrup
  • 1/2 tsp salt
  • 2 oz cream cheese
  • 2 tbs honey

Instructions

  • Combine the water and oats in a sauce pan and bring to a boil.
  • Reduce heat and simmer until desired consistency, stirring occasionally.
  • While oatmeal is simmering, combine 2 oz cream cheese and 2 tbs honey.
  • Place the mixture in a ziplock bag, squeeze out excess air and snip corner of the bag.
  • Add pumpkin, pumpkin spice, maple syrup, and salt to the oatmeal and stir.
  • Let sit a few minutes to warm through
  • Serve oatmeal in bowls with cream cheese 'frosting' swirled over the top.
