Strawberry Pineapple Mojito Mocktail

Ingredients

  • 2 tablespoons pineapple cut into chunks
  • 1-2 strawberries sliced (medium size)
  • 5-6 fresh mint leaves
  • ½ lime cut into 4 wedges
  • 1/2 tablespoon white sugar you can add 1/2 tbsp. More if you prefer sweeter
  • 1/2- 1 cup ice cubes
  • 1 ½ teaspoons rum extract
  • 12 ounces sparkling water

Instructions

  • Place mint leaves, pineapple, and strawberries into a glass.
  • Use a muddler to crush the mint, pineapple and strawberries, until desired consistency is reached.
  • Add sugar and the juice from 1-2 limes wedges. Muddle again. Do not strain the mixture.
  • Add ice, filling the glass almost to the top. Pour the rum extract over the ice, and then top off with sparkling water.
  • Stir, taste, and add more sugar if desired.
  • Garnish lime wedge and/or strawberry and pineapple.

Notes

  • You can substitute honey for the sugar, or a zero calorie sweetener such as Swerve or Truvia. Make sure to check a conversion chart.
  • Make it a cocktail! Use 1 1/2 ounces of white rum in place of the rum extract.
  • If you're not partial to the rum flavor of the mocktail, you can leave the rum extract out completely.
