Avocado BLT Pinwheels
Crisp bacon, juicy tomatoes, healthy greens and avocado mayo all wrapped up in a spinach tortilla.

Ingredients

Avocados from Mexico avocado, mashed
1
tablespoon
mayonnaise
1
multi grain or spinach tortilla/wrap
2
strips bacon, cooked and crumbled
1
slice NatureFresh Farms tomato, diced
1
small handful Earthbound Farms Spring Mix or Spinach
Instructions
Combine the mashed avocado and mayonnaise and spread on the tortilla.
Add bacon, tomato and lettuce. Tightly roll and slice into rounds.
Serve with fruit such as Zespri Kiwi, Sun World grapes, Crispy Green freeze dried fruit. And fresh veggies with Vegy Vida Dips.
Notes
If making ahead, add a little lemon juice to the avocado and mayonnaise mixture to help keep from turning color. Slice just before serving.
