Mason Jar Quinoa Salad Recipes
fresh healthy salads ready 'to-go' for a perfect lunch. Asian, Greek, or fresh fruit!
- 1/4 cup Balsamic vinaigrette
- 1 cup grilled chicken breast cut into chuncks
- 1/2 cup cut up fresh fruit such as strawberries, raspberries, blueberries, blackberries, oranges
- 1/2 cup quinoa
- 2 cups Spring Mix lettuce or enough to fill the jar
For each salad, layer all the ingredients in the order listed.
Store in the refrigerator for up to 3 days.
To serve, pour on a plate or from the jar.
These are approximate measurements for quart sized mason jars. If you are using pint sized, you'll want to cut down on the ingredients.
For the Asian salad: Layer Asian dressing, carrots, peppers, cabbage, chicken, quinoa, sunflower seeds and spring mix lettuce.
For the Greek salad: Layer dressing, cucumbers, carrots, tomatoes, feta cheese, chicken, quinoa, banana peppers, and spring mix lettuce.
