Equipment

  • 2 rimmed baking sheets
  • Parchment papaer

Ingredients

  • 2 Tbs butter unsalted
  • 2 medium onions sliced
  • 2 red apples cut into small pieces
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 sheets frozen puff pastry thawed
  • 1/2 cup plain Greek yogurt must be Greek, regular is too thin and wet.

Instructions

  • Preheat oven to 400.
  • Heat the butter in a large skillet over medium heat.
  • Add the onions, reduce heat to medium low, and cook, stirring occasionally, until soft and golden brown.
  • Stir in the apples, salt, and pepper and cook until just tender, about 2 minutes.
  • Place each sheet of pastry on a parchment lined baking sheet and prick all over with a fork.
  • Spread with the Greek yogurt, leaving a 1/2 inch border.
  • Top with the onion mixture and bake until the pastry is crisp and browned, 30 minutes.
  • Cut into squares before serving.

Notes

  • Crumple parchment paper into a ball, then straighten out, this makes it much more pliable to work with when placing it on your pan.
  • For this recipe, don't quite caramelize all the way to avoid getting too dark in the oven.
  • Make sure to use Greek yogurt because of its thickness. Sour Cream is a great substitute.
  • Don’t forget to poke holes in the dough! This will allow the steam to escape, which keeps it level and prevents it from puffing up too tall as it bakes.
  • Apples can be diced instead of sliced if you prefer.
  • For a variation, try some cheese. Reduce or omit the yogurt and dot the caramelized onion puff pastry with a little gorgonzola or goat cheese.
