Slow Cooker Taco Soup

An easy recipe full of all the taco flavor in a soup form. A real food, dump and go easy meal!

Ingredients

  • 2 lbs Ground beef or ground turkey
  • 1 cup onion chopped
  • 1 cup orange bell pepper chopped
  • 2 ½ cups beef broth
  • 2 cups black beans prepared from dried, or canned
  • 1 cup frozen corn
  • 2 cans diced tomatoes
  • 1 can diced tomatoes with green chilis
  • 1 tsp sea salt
  • 1 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder

Optional toppings

  • shredded cheese
  • diced avocado
  • tomato slices
  • Jalapeno slices
  • cilantro
  • yogurt or sour cream

Instructions

  • Brown the ground beef or ground turkey and add it to your slow cooker.
  • Add the onions, peppers, broth, beans, corn, tomatoes and seasonings. Cook on low 6-8 hours or high for 4-6 hours
  • Serve garnished with cheese, tomatoes, avocados, jalapeños, yogurt or sour cream, and cilantro if desired.
