  • juice from 2 limes
  • juice from 2 lemons
  • 1/3 cup olive oil
  • 3 cloves garlic, pressed or minced
  • 2 tbsp brown sugar
  • 1 tsp cumin
  • 1 tsp chile powder
  • 2 lbs flank steak

Serving options:

  • warmed tortillas

  • tortilla chips

Instructions

  • Combine soy sauce, lime juice, lemon juice, olive oil, garlic, sugar, cumin and chile powder in a small bowl, mix well.
  • Place steak in a shallow pan or zip lock bag, and pour marinade over top. Marinate at least 30 minutes, but 1 day is ideal.
  • Preheat grill to 400-500 degrees. Place steak on the grill, and close the lid. Cook for 6-10 minutes, then turn and cook for 6-10 minutes more.
  • Remove from the grill, and let rest 10 minutes before slicing against the grain.
  • Serve on tortillas with sautéed peppers and onions, guacamole, pico de gallo, fresh lime wedges and cilantro.

Notes

Freezer instructions:
Place steak in a ziplock bag. Combine marinade ingredients and pour over top of steak. Seal the bag and push the marinade around so it covers the steak well. Lay flat in the freezer. Before using, thaw in the fridge.
