Ingredients

sweet potatoes
3
tablespoons
butter
clarified if dairy free

cup
coconut milk

eggs

bacon
cooked and crumbled.

fresh rosemary
finely chopped, plus more for garnish
salt and pepper to taste.

Instructions
Prick sweet potatoes several times with a sharp knife. Bake in a preheated 375° oven for 45 minutes to 1 hour, or until easily pierced with a fork.
Once the potatoes are cool to the touch, scrape out the flesh and place into a bowl. Mash with a fork or a potato masher.
Add coconut milk, eggs, rosemary, salt and pepper. Mash again.
Add bacon crumbles and stir to combine.
Transfer to a 9 x 13 or similar casserole dish.
Bake, covered at 350 for 30 minutes.
Serve with extra bacon crumbles, fresh rosemary, and dried cranberries as garnish.
Notes
This recipe is easily dairy free if you use clarified butter, or substitute coconut oil in place of the butter.
