Melon Strawberry Bruschetta
watermelon, cantaloupe, and strawberries blended together with basil and balsamic to top off crusty french bread. A delicious appetizer or snack!
- 2 tomatoes diced
- 1/2 cup watermelon diced
- 1/2 cup cantaloupe diced
- 8 Well-Pict Berries strawberries diced
- 1/2 shallot finely chopped
- 2 Tbs olive oil divided
- 1 Tbs balsamic vinegar
- 3-5 basil leaves chiffonade (sliced in thin strips)
- 1 loaf french bread sliced into 1/2 inch thick
Combine fruit, 1 Tbs oil, vinegar and basil and mix well.
Brush the remaining olive oil on both sides of the slices of french bread.
Place the bread under the broiler just until toasted and golden.
Remove the bread from the oven and top with fruit mixture.
