Mediterranean Quinoa Bowl

Nutty quinoa topped with fresh fennel, cucumber, feta, tomatoes and olives and homemade lemon dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water or broth
  • 1/4 cup grape tomatoes chopped
  • 1/4 cup cucumbers chopped
  • 1/4 cup fennel chopped
  • 1/4 cup feta cheese
  • 1/4 cup kalamata olives
  • 1/2 cup olive oil
  • 2 Tbs fresh squeezed lemon juice
  • 1 tsp honey
  • salt and pepper to taste
  • fresh parsley for garnishing optional

Instructions

  • Cook quinoa according to package instructions.
  • While quinoa is cooking, chop the vegetables.
  • For the dressing, place olive oil in a small bowl.
  • Add lemon juice, honey, salt and pepper, whisk well.
  • Place quinoa into bowls and top with vegetables.
  • Drizzle with dressing, and garnish with parsley.
