Fettuccine Alfredo {done light}

Ingredients

  • 2 cups milk
  • 3 oz cream cheese
  • 3 Tablespoons flour
  • 1 teaspoon salt
  • 1 Tablespoon butter
  • 3 garlic cloves minced
  • 1 cup parmesan cheese freshly grated
  • 1/4 teaspoon nutmeg
  • 16 oz Fettuccine noodles
  • 2 cups cooked chicken cut into bite size pieces (optional)

Instructions

  • Place the milk, cream cheese, flour and salt in a blender and mix well.
  • Melt butter in a medium sauce pan.
  • add garlic, and cook until fragrant, about 30 seconds.
  • Add milk mixture.
  • Stirring, bring mixture to a simmer and continue cooking until sauce is thickened.
  • Remove from heat, add parmesan cheese and nutmeg.
  • Cover and set aside.
  • Add Fettuccine to boiling water and cook according to package instructions.
  • Drain pasta and return to pot.
  • Add chicken, if using, and sauce, and mix well.
  • Serve immediately.
