Add the chopped cucumber, mint, and agave syrup to a cocktail shaker. Muddle until the cucumber has broken down quite a bit and has released a lot of its juices.
1 Persian cucumber, 1 handful fresh mint leaves, ½ ounce agave syrup
Add the lime juice to the shaker along with a large handful of ice. Shake vigorously for 20-30 seconds until the shaker feels chilled and frosty.

Strain into a tumbler or double rocks glass filled with ice. Top with the sparkling water. If desired, garnish with a cucumber ribbon and sprig of mint.

Make sure to muddle the cucumber really well until it is mostly broken down. This will extract the most juice and will give the mocktail a balanced, refreshing flavor.
If you prefer a sweeter drink, use ¾ ounce of agave syrup rather than ½ ounce.
Fresh lime juice will yield the best flavor but bottled lime juice can be used in a pinch.
Depending on how juicy your limes are, you’ll need anywhere from 1 to 3 to yield an ounce of juice.
If you don’t have access to Persian or mini cucumbers, you can use a 5-inch piece of English cucumber instead.
To create the ribbon of cucumber, use a vegetable peeler to remove two thin slices of cucumber. Accordion fold each slice then skewer onto a cocktail pick.
