Pineapple Ginger Beer Mocktail

This pineapple ginger beer mocktail is light and refreshing with a touch of spice. Ingredients

  • 3.5 ounces pineapple juice Just under 1/2 cup (7 tablespoons)
  • 1 ounce freshly squeezed lime juice 2 tablespoons, usually 1 lime
  • 1 1/2 ounces orange juice 3 tablespoons
  • 2-3 ounces ginger beer 4-6 tablespoons
  • ice

Instructions

  • Add the pineapple, orange, and lime juices to a tumbler or lowball glass. Stir, then add a handful of ice. Top with the ginger beer.
  • Garnish the glass with a pineapple wedge and lime slice if desired.

Notes

  • Fresh lime juice will yield the best flavor. A citrus press is great for juicing the lime.
  • To get the most juice out of your limes, place them on your counter and firmly roll them back and forth several times with the heel of your hand. This helps encourage the segments to burst and makes extracting the juice easier.
  • Start with chilled ingredients to keep your drink cold longer and the ice from melting as quickly.
  • Using a cocktail jigger is an easy way to measure out the ingredients. They typically come 2 sided, one side is 1 oz. and the other is 2 oz.
