you can add 1/2 tbsp. More if you prefer sweeter

Instructions
Place mint leaves, pineapple, and strawberries into a glass.
Use a muddler to crush the mint, pineapple and strawberries, until desired consistency is reached.
Add sugar and the juice from 1-2 limes wedges. Muddle again. Do not strain the mixture.
Add ice, filling the glass almost to the top. Pour the rum extract over the ice, and then top off with sparkling water.
Stir, taste, and add more sugar if desired.
Garnish lime wedge and/or strawberry and pineapple.
Notes
You can substitute honey for the sugar, or a zero calorie sweetener such as Swerve or Truvia. Make sure to check a conversion chart.
Make it a cocktail! Use 1 1/2 ounces of white rum in place of the rum extract.
If you're not partial to the rum flavor of the mocktail, you can leave the rum extract out completely.
